- 2 lbs boneless skinless chicken thighs
- 4 potatoes
- 2 cups baby carrots
- 1/2 cup light Italian dressing
- 1/4 cup parmesan cheese
Place chicken pieces, cut up potatoes, and baby carrots in large, coated baking dish. Drizzle with Italian dressing. Sprinkle with parmesan cheese. Bake covered for 1 hour at 400 F.
