Ravioli Casserole

Last week, my aunt (and godmother) needed an easy dinner idea, something that could be prepared and cooked quickly. As she lay in bed that night, she came up with this recipe. It tastes like lasagna. See vegetarian option at end.

  • 1 bag of frozen beef and ricotta ravioli
  • 1 28 oz. jar prepared spaghetti sauce
  • 3 c. shredded mozzarella cheese

Prepare ravioli according to package directions. Drain thoroughly. Preheat oven to 350 degrees. Lightly spray a 9 x 11 pan with cooking spray. Spoon a thin layer of sauce in bottom of pan. Arrange a layer of cooked ravioli on sauce, sprinkle with mozzarella cheese and then spoon another layer of sauce. Continue layering ravioli, cheese and sauce, finishing with mozzarella cheese. Place casserole uncovered in 350 degree oven for 20 minutes.

Vegetarian option – Use spinach or vegetable ravioli.
