Veggie Quiche


  • 1 prepared 9 in. crust
  • 2 T Dijon-style mustard
  • 2 1/2 c. broccoli florets
  • 1 c. shredded Swiss cheese
  • 1/3 c. chopped green onions
  • 3 eggs
  • 1 c. milk
Preheat oven according to piecrust package directions.  Spread mustard on the  bottom and sides of the piecrust.  Bake for 10 minutes.  Remove from the oven.  Place broccoli, cheese and onions in the piecrust, mixing well.  In a small bowl, combine eggs, milk, and salt and pepper to taste.  Pour over the vegetable mixture.  Bake in a 400 degree oven for 35-40 minutes, or until the center is set and top is brown.  Let stand for 20 minutes before cutting.
