BBQ Chicken Salad


  • 2 large boneless chicken breasts
  • 1/2 head of lettuce
  • 1/2 cup frozen corn, thawed
  • 1 cucumber, peeled and sliced
  • 1/2 can of black beans, drained and rinsed
  • 6 corn tortillas
  • 1/2 cup  BBQ sauce
  • 1 cup of ranch dressing


Cook 2 chicken breast basted with BBQ sauce. Slice or chop and set aside. Shred or chop lettuce as desired. Place corn in a colander and rinse with cold water, rinse the black beans with water, drain. Slice the cucumber and fry the tortilla strips. Then build the salad with all the ingredients!
