Chicken Corn Chowder

Ingredients:

  • 3 boneless chicken breasts, cooked and shredded
  • 2 cans (16 oz.) whole kernel corn, drained
  • 2-3 medium potatoes, chopped
  • 1 onion, chopped
  • ½ t. salt
  • 2 c. chicken broth
  • 2 c. whole milk
  • ¼ c. butter

Combine first 6 ingredients in slow cooker.  Cover and cook on low for 7 to 9 hours.  Puree in blender or food processor then return to slow cooker.  Stir in milk and butter.  Cover and cook on HIGH 30-60 minutes longer. Makes 6-8 servings.
